Throw me something delicious mister! Just in time for carnival season, this Mardi Gras King Cake Latte is a fun festive way to jazz up your morning. It’s a warm cinnamon infused sweet delight filled with the nostalgia of carnival season in a mug. Think of it like enjoying a sweet cinnamon filled piece of King Cake with your morning cup of joe.
Ingredients:
For the Simple Cinnamon Syrup:
- 6 organic ceylon cinnamon sticks
- 1.5 cup organic coconut sugar
- 1.5 cup water
Cinnamon Sugar Topping:
- ¼ teaspoon organic coconut sugar
- ⅛ teaspoon ground organic ceylon cinnamon
For One Latte:
- 2 tablespoons of simple cinnamon syrup
- 1 Tbsp grass-fed butter (we recommend Kerrygold unsalted)
- 2 oz brewed Higher Grounds espresso (or strong coffee)
- 1 Tbsp bovine colostrum (we recommend Surthrival colostrum)
- cinnamon/coconut sugar topping, for dusting
Directions:
For the Simple Cinnamon Syrup:

Put all ingredients in a saucepan and simmer. Stir to make sure sugar dissolves completely. Take off heat and steep for 20 minutes. Strain and pour syrup into an airtight container. The syrup will keep for 2 weeks in the refrigerator.
For One Latte:

Measure out coffee grounds to brew and mix 1/2 a tablespoon of Ceylon cinnamon into the grounds. Add hot water and brew for appropriate time of chosen brewing method. While the coffee is brewing, add 1 tablespoon of Gras-fed butter, 2 tablespoons of simple cinnamon syrup, and 1 tablespoon of Bovine colostrum into a blender. Once the coffee is done brewing, go ahead and pour it into the blender. Blend the ingredients together on high for 30 to 40 seconds, no more than 60. Pour the mixture into your favorite mug or to-go cup. Sprinkle some cinnamon/sugar dust on top and enjoy!
